Wednesday is Religious Education night in our household so mealtime needs to be simple in order to get kids from church, fed and to swimming. Which is why Tacos were the order of the night! Now, it appears odd that you would see a Hot Dog tray in the picture but it's the rage down in Mexico... ok, maybe just the rage in our house... an invention I stumbled on one night to keep the tacos from spilling over. Simple solution and it's just oddly funny.
Now for the surprise... Katy was pouncing around the kitchen is search of chocolate. It seems that it's been disappearing a lot lately... I had an idea to make brownies. Easy enough. As we were reading the back of the nearly homemade brownie box, they had great suggestions of adding coffee or nuts or carmel...BAM... dulce de leche popped into my brain. Mexican carmel which I conveniently had in my refrigerator!!!! Talk about luck, ending the night with something authentically semi-homemade!
The girls came home with a look of gloom, tired and hungry. After claiming "I'm starved" in the usual grumpy tone, they caught a glimpse of the bars sitting on the stove, cooling from the hot sun of Mexico. And with that, the warmest smiles filled their faces as they gobbled a row each of the chocolate carmel goodness.
