3rd times a charm.
Day 3 in Japan: Hoisin Chicken was the main feature this evening served with rice, steamed pea pods and a salad with asian (bottled) dressing. Ok, call me Sandra Lee...it's a working mom thing:) The recipe was given to us when Andy and I got married. My sisters had a campaign to "Save Pam's Kitchen" and all our relatives mailed in their favorite recipes. So tonight's dinner was in honor of cousin Lori Delman. DELICIOUS.
Hannah claimed, "have we had this before? It tastes familiar"... Katy was happy eating her rice, nibbling on the somewhat sweet bbq tasting chicken and loving her salad (though she cheated with caesar dressing). Then there's Elie. She sat and complained that she was done with Japan food, wanted nothing to do with it. I then asked her if I could make her Ramen Noodles...SOLD. Funny, it was still Asian...:)
Hannah and Katy are on board to carry this through, regardless of Elie's plea so I think we will have leftovers tomorrow while I regroup. We have achieved the minimum, dining for three nights in Japan.
There's been a request to post my recipes so here it is:
Cousin Lori's famous Hoisin Chicken
1.5 - 2lbs. Chicken Breast
Place in pyrex pan. Set oven to 350 degrees.
Mix in a bowl:
1/2 cup Hoisin sauce
1/4 cup Ketchup
2 Tbl. Mirin (Japanese cooking wine)
2 Tbl. Sugar (I used 1.5)
1 clove garlic (I use minced jarred garlic- a heaping scoop)
1/2 tsp. Five Spice powder
Pour over chicken. Bake for 45 minutes. Turning and basting a few times.
