Chicken Burritos


Mi Burrito es Muy Buena.
I really should have served up Tacos tonight to be theme-like with Taco Tuesday but it didn't work out that way. So, Chicken Burritos was the meal choice tonight instead.

The kids LOVE burritos. Go figure. They love refried beans tossed with chicken, salsa and cheese. It's perplexing, I must say. The texture and "look" of the inside is so out of character for them. I'm not complaining, however. Three happy kids at mealtime is heaven.

So essentially, that's what it was. I think it's the blandness they love. With the adult version, I used a Chipotle paste (purchased at Grazianos)  to add a bit of zing to the meal.

Chicken Burritos
Preheat oven to 400 degrees

Mix in a bowl:
1 15 oz. can refried beans
1 cup shredded cheese (I used the Chihuahua cheese)
1/4 - 1/2 cup salsa
1 cup shredded or diced chicken (used 1/2 rotisserie chicken)
2 Tbl. Chipotle Paste (option for spicier flavor)

Spread mixture evenly on 4 burrito size tortillas. Roll up.
Place on lightly sprayed pan. Cover with foil and bake for 20 minutes.
Remove foil and add another 1/2 cup or more of shredded cheese.
Bake another 8-10 minutes.
Serve with salsa, sour cream, hot sauce or whatever suits your hispanic fancy.
