Chicken Cordon Bleu

Blue Ribbon Meal.


Tonight we served up a famous French dish, Chicken Cordon Bleu. Chicken Cordon Bleu is a French-inspired poultry dish, although evidence suggests that ChickenCordon Bleu was actually developed in the United States by chefs imitating other stuffed meat dishes from Europe. The name of the dish is clearly of French origin  Cordon Bleu means “blue ribbon” in French, and in French culinary tradition, the Cordon Bleu is awarded to food or chefs of particularly high quality.

This meal was definately Blue Ribbon. Not a morsel left, as the kids lined up for 2nd helpings! Yes, even Katy:) Chef Andrew delivered a high quality French meal for his girls this evening...amazing. We topped off the evening with a famous French Dessert known as a Chocolate Croissant.  Très Délicieux!

Chicken Cordon Bleu
4-6 chicken breasts, pounded
8 oz. Sliced ham
8 oz. Sliced Swiss cheese
3 Tbl. flour
1 tsp paprika
6 Tbl. butter
1/2 cup dry white wine
1 chicken flavored bouillon cube or 1 tsp stock base
1 Tbl. corn starch
1 cup heavy whipping cream (we substituted chicken broth for healthier version)

Directions:
1) Spread chicken breasts flat (pound); fold cheese and ham slices to fit on top; fold breasts over filling and fasten edges with toothpicks.
2) On waxed paper, mix flour and paprika; use mixture to coat chicken pieces.
3) In 12-inch skillet over medium heat, in hot butter, cook chicken until browned on all sides. Add wine and bouillon. Reduce heat to low; cover and simmer 30 minutes or until fork-tender; remove the toothpicks.
4) In cup, blend corn starch and cream until smooth; gradually stir into skillet. Cook stirring constantly, until thickened; serve over chicken.


Chocolate Croissant
1) Purchase 1 box of Chocolate Croissants from Trader Joe's (4 come in box)
2) Place on parchment lined cookie sheet.
3) Let rise uncovered for 9 hours.
4) Heat oven, bake as instructed on box.
